We use a lot of vanilla extract in our house – home made ice cream, home made yoghurt, cakes, etc. So I have been finding out how to make it myself.
It is very easy and works out just under half the price of good quality, shop bought vanilla extract.
You will need: 3 vanilla beans; 250ml vodka and a clean jar/bottle.
Split the vanilla beans with a sharp knife and scrape out the seeds.
Pour the vodka into a clean jar or bottle. Add the beans and seeds to the vodka and seal tightly. Give it a shake and put it in a dark cupboard. When you remember give it another shake – I shook mine every other day.
Good quality, shop bought vanilla extract is about £5.50 for 118ml. I was able to make the equivalent amount for £3.15. It would have been about £2.50 if I’d used value or basic vodka.
Here it is after 5 days – I thought it might take up to 6 weeks to infuse but it looks like it will be much faster than that.
Three weeks after I first started making it, I strained it into a maple syrup jar and then tested it against some bought vanilla extract that I had in the cupboard. It is just as good, if not better!
