Potato bread in my opinion is the best bit of an Ulster fry. Although we can buy a version of potato bread here in England it doesn’t quite taste the same as the bread we get in Northern Ireland.
I recently came across my old school cookery notebook and the first recipe in it is for Potato Bread. I remember it being one of the best things I ever cooked at school and as I had some leftover mashed potato I gave it another go. It was delicious. Here is how to make it:
